Belizean Hot Sauce

3 to 4 tablespoons Hot Mama’s Habanero Pepper Mash
1 small onion, chopped
2 cloves garlic, chopped
1 tablespoon vegetable oil
1 cup chopped carrots
2 cups water
3 tablespoons fresh lime juice
2 tablespoons white vinegar


In a skillet, sauté the onion and garlic in the oil until soft.  Add carrots and water and bring to a boil.  Reduce the heat and simmer until the carrots are soft.  Remove from heat and transfer to a blender or food processor.  Add the habanero mash, lime juice and vinegar and puree until smooth.  Serve at room temperature or chilled.
